Berber Breakfast Eggs

“In my parents’ home, eggs are something we used to enjoy almost religiously. They were allowed only for breakfast and never on weekdays. Nevertheless, my brothers and I used to quietly sneak into the kitchen in the afternoon to experiment with highly questionable egg recipes. And by recipes, I mean something that contained way too much butter and ketchup. In my opinion, eggs are much more than a cheap way to have our daily serving of protein; they are delicious, especially when cooked the right way. This Berber recipe is one of the many ways my mom used to prepare eggs for us on weekends.”

Root Vegetable & Prune Tagine

“For a long time I used to shy away from root vegetables. I somehow found them a bit unexciting. This obviously changed when I went to cookery school, immersed myself in the culinary world and started cooking and eating some of my food pet peeves. If you are unsure how you feel about root vegetables, try this recipe because it will make you fall in love with them. The spices effortlessly bring out all the flavors of the root vegetables, and the prunes add sweetness and intensity to this delicious vegan tagine.”

Cheese & Sweet Chermoula Eggplant

“The eggplant is one of my favorite vegetables, and whether it’s roasted, braised or burned, I have rarely been disappointed with an eggplant dish. I find it incredibly creamy once cooked and it literally works with everything. When I am in a rush, my go-to meal is a roasted eggplant because it’s so simple and quick, and it always keeps me full and satisfied. But I am the happiest on those lucky days when I have the right ingredients in my fridge to make my sweet chermoula to go with it!”

Chicken Mchermel

“I kept going back and forth over whether or not I should include this recipe in my book. While this is without a doubt one of the most famous Moroccan tagines, I wasn’t sure that the world needed another version of it. But I changed my mind because my chicken mchermel really is like no other. It has all the irresistible Moroccan-scented, lemony flavors, plus the perfect sauce-to-onion ratio, which is what makes all the difference.”
